It's the version <em>number</em> that's important. From what I gather, they made some very major changes a year or so back and very old ROMs don't work with the newer versions. Also they tweak the ROM packages themselves and add missing files etc. as time goes on. All ROMs that work with the latest version of MAME will also work with MacMAME. Make sure you leave the files zipped up just as they were when you got them. Also try opening a few just to check they're not corrupted (they should be full of collections of smaller files). I'll have a go at remapping the keys and get back to you - if the built-in interface doesn't work, you can do it by editing the config files but I'm not sure exactly how. MAME has built-in support for most of the standard USB arcade controllers, so if you get a better-known one you should be fine. It should also work with most standard gamepads and joysticks out there as long as they are supported by OS X.
